Not installing customer supplied parts is pretty common. Most shops base their labor rate on the fact that they're getting money back on the parts, too, so when you evaporate the parts profit they would be selling you their labor at a discount. Some shops don't mind, some shops add a labor premium for installing customer supplied parts, some won't do it at all. You found one of the latter.
Frankly, if you're paying someone to do the labor I'd pay them for the parts, too. If their clutch fails it's on them entirely. If your clutch installed with their labor fails, then what? Whose fault is it? Who honors the warranty? Granted $300 is no small amount of money, but it's a small premium (IMHO) to put any future issues squarely on their shoulders.
I do think $900 is a crazy high price, but I could be way out of touch of parts prices. Last c900 clutch I bought was in '08, and the last time I talked to someone about doing a clutch for me was probably around Y2K. At the time, my indy charged $380 for the job, plus slave if needed. It was like two hours of labor and $200 in parts. I'm sure things have gone up, but 2.5x seems a little nutso.
It's worth shopping around, but I'll also mention that the clutch is a *remarkably* easy job on a c900. Not spark plug easy, but not bad at all. It requires few tools and little "expertise," just basic direction following. On turbos there's a little more work to do than non, but none of them are tough. It's definitely a job one person can do. First attempt I'd probably give it two days of easy to moderate pace, second attempt it's maybe four hours. I can knock one out in an hour and half.
On that subject, maybe there is another c900 owner near you who'd be interested in making a hundred bucks and showing you how it's done?
