If you got the fan to run with the relay (terminals 30 and 87) jumpered and the sensor switch jumpered then you have proven that all the wiring is intact. All that leaves is the two components; relay and sensor switch. By reconnecting ONLY the relay, while keeping the sensor switch jumpered, you will determine whether the relay closes like it should. If it does then by default the sensor switch is failing to close when hot and that can be because the switch is defective or the coolant level is too low to contact the switch.
Remember that the key must be in the run position in order for the relay to work.
