A lot of people use welding cable because it's cheap and very flexible. The downside is that the insulation is neither heat nor chemical rated so you may have problems long term. Going through the car, welding cable is certainly fine - but underhood you really want SGT or SGX battery cable. I would use 2ga or 4ga for the starter and engine grounds, you can use 6ga or 8ga for the chassis side.
I buy my cable from Remy Battery - they are nice people and have good prices. They have battery terminals for both crimping and soldering - if you're going with the latter, I recommend Quick Cable's Fusion terminals as they have the proper amount of flux and solder built into the terminal barrel, so all you do is heat the terminal with a torch and slide the battery cable in. Easy, no mess, works perfectly every time.
