Make sure the + and - battery connections are good. Battery cables usually look good, but it is under the heat shrink or insulation at the end terminals that the copper wire can get eaten away. I have used jumper cables running in parallel to the battery cables to help troubleshoot. Also clean the ground connections near the thermostat housing and at the bottom of the front cross member on the passenger side.
When you stepped on the brake and the motor stalled might be related to your brake lights...do they work? Convertibles typically fry the connectors to the tail lights. If there are some connections that are unusable, then by-pass the connector and hard wire those connections. Your stalling and no restart after pressing the brakes might be a ground loop issue because of the tail light connector.
I had a fast oil leak after a head gasket replacement. I forgot to put the sealing washer on the timing chain tensioner. Another oil leak occurred after the valve cover gasket got pinched after it fell out of the groove.
