The '89 through '93 ('94C) LH 2.4 wiring harnesses are all the same, so it doesn't matter what year the donor is. You could even use a harness from an '89 or '90 non-turbo.
The fusebox is the same between different cars of the same year as well, but the forward harness (from the fusebox, terminating at the left headlight) is different between turbo and non and there are a couple extra wires that go under the windshield on a non-turbo. It would definitely be easier to swap boxes rather than try and splice the harness in, but IMLE the range for that swap is small - the fusebox changed slightly almost every year... IMHO it'd be a real pain to source.
The APC system is almost an entirely self-contained sub-harness that is easy to extract. It only needs a couple wires back to the fusebox and my approach there would be to section out just the APC harness and stick it into another body. Similarly, switching between EZK and, well, non-EZK is really just a matter of repurposing some wires. I don't think I would waste time with fuse boxes - you're talking about 20-some odd wires... not a huge task to just add in.
That said, for a project like this, if it's in the budget - go T5. It eliminates this entire conversation. Yank the LH harness, get a T5 harness (build or buy), connect six or eight wires and you're done. It'd probably be the smallest amount of work during the project you outlined.
