Thank you to everyone who has contributed to this post.
As part of the cooling system and erratic temperature gauge trouble shooting, I purchased a new water temperature sensor. This is the one, that is mounted in the thermostat housing. The Saab part number is 30539720.
Then, I set up an MS Excel spreadsheet and made a graph of sensor resistance (ohms) versus water temperature (F). I did this on my stove by immersing the sensor in water, and then measuring the resistance with a Fluke multi-meter, as the water was heated.
Please see the screenshot attached. Here, the solid line is the sensor resistance (ohms) measured at 10 degree temperature increments.
This is useful, becasue now I can compare the temperature gauge needle position to the actual temperature at the sensor. That is, when the needle goes wacky and pegs at maximum, what is the resistance at the sensor, and therefore what is the water temperature ?
My next step will be to drive the car, with the multi-meter in hand. I suspect that the needle is wacky and that the coolant system is working correctly.
