my understanding of this is that having more valves helps in a couple of ways. If you have two valves with a smaller diameters but with the same total area of a big valve, it is easier to optimally position the valves and more improtantly position the spark plug. Having one big intake and one big exhaust valve makes it more difficult to position. Have more valves also allows more optimal and evenly distributed fuel/air flow in the cylinder, leading to more comlete and even combustion, better efficiency, etc
