Most of the times it is ok with just replacing the valve and lap it to the seat. You might not have to grind the seat at all. It depends on what it looks like when you have given the valve/seat a light lapping with grinding paste.
Make sure to give all the other valves a lap job too and check for cracks or burn marks on the valves.
The valves and seats on the modern Saab and Volvo engines (mid 70s and up) are so strong that very rarely do you need to cut/grind the valves and seats but just give them a good lap job.
Many American machine shops are not used to that and they always opt for cutting/grinding the valves and seats.
