You figured it out I believe, thermostat.

It isn't easy to get at and it's worse if there's grime, age, etc. involved.

As I recall there's a bracket off the back of the thermostat housing holding wiring, held on by two M6 (10mm head) bolts.

It's hard to get at them and hard to turn them by much. The kind of wrench that goes by the name GearWrench, racheting box wrench, would make it easier.

Those bolts are way longer than they need to be so it means many many turns with a standard wrench, as you can only move the wrench thru a small angle each time you set it.

A tip on replacing, visit a hardware store and get a shorter version of the same bolts. I only put one back in on reassembly.

The thermostat sits down in a groove in the head, with a split gasket that seals it to the head and to the cover. That groove on older cars gets lots of corrosion in it - - try scraping yours with the blade of a screwdriver if that's the case, then maybe use a small sharp stone to sort of hone it down to bare metal, before reassembly, so it doesn't leak.

Maybe yours won't have corrosion there, though.

The usual warnings on this site are to get a good thermostat with the air-bleeding hole in it, meant to sit on the top side.

Don't drive car long distances till you fix it.
