It is possible that you missed damage to a cylinder wall/ possible crack in cylinder head. Liquids are not compressible, so it is possible that a cylinder is filling with coolant, eventually the engine cannot compress liquid in one cylinder. Pull the spark plugs and look for white residue on the electrode(s).

Since you have some experience with fluids, I am confident that you replaced the oil and coolant following gasket installation. Check the dipstick as well for coolant in the oil. When the engine sits long enough, the coolant will bleed past the rings and the starter appears to turn the engine over normally.
