I had a chance to replace the oxygen sensor yesterday, and after sitting for four weeks it started right up and idled perfectly at ~850 rpm, with no idle hunting and no stalling. Also with the rebuilt AMM set at 250 ohms there was no black smoke at all as it warmed up. So it seems like replacing the AMM helped somewhat, but to completely resolve the issues of cold start stalling and running rich the oxygen sensor needed to be replaced.
So these issues are fully resolved. Thanks to everyone that provided feedback --
