On the CVs, use CV grease. For the inner drivers, use wheel bearing grease. I use Castrol Multi Purpose Wheel Bearing grease. CV grease is too thin for the inner drivers. If what came out was fluid like it sounds like whatever was in there was too thin, unless you had been driving the car before you took it apart or it was really hot outside.
You may want to check the inner drivers for wear before you put it back together. There are three raised sections of the driver. If you rub your finger down the curved part of these and feel indentions worn into them you'll know they're worn. If they're worn out you can swap them side to side, you'll just need to swap their housings (swap the drivers side to side, but keep the housings and shims on the side they were on originally).
Reassembly: Either way will work. Or you could put the hub assembly in place with one ball joint bolted in (I think you need to leave the upper one unbolted) and then slip the axle in, then bolt the other ball joint in place.
