Wow sounds like a sweet find. Well you are kinda stuck between having it stock and really making it fun. I was in the same boat last year with my 99T. It was pretty much stock and complete, but I know I wanted to upgrade it with more modern technology, like an intercooler and water injection, sway bars ect... If you really plan on entering a concours you a have to return it to its original condition with original components (everything). That means no header, konis or sway bars. Now it is your car so do with it what you want. If you go the higher performance route. I'd start with the cooling and create a cross flow rad like the 900s. Electic water pump on lieu of the stock B pump. Trans oil cooler to save the last of the 4 speeds. Add an engine oil cooler. As far as the fuel the k-jet is not bad and without forced induction (turbo) I'm not sure it will be fuel starved. You can add a drop in K/N airfilter. Add some cold air plumbing to the air box. Dial the fuel dist to a bit on the rich side. 3 millimeter allen.
