To say you didn't touch the A-arms when putting in a new spindle is somewhat wishful. Any kind of messing around down there can throw things off. Sadly, I know that everytime I mess with the front end of my cars I can expect to need an alignment thereafter. Your ride height could be due to things hanging loose for a while (I'm assuming you are riding higher than you are used to) but changing the spindles shouldn't have anything to do with it.
Ride around for a bit and then see what happens.
I will say that the first time I did this conversion on my '76 EMS, the donor car had been in an accident. It had been taco-ed by a broadside hit to the B-Pillar. Suddenly, though, I was aware that my camber was way off -- like something around 3 degrees on one side and 1.5 on the other. Though a little negative camber can be great for the track, that much around town was going to be a disaster on tires. A few trips to the alignment shop and will all shims removed I was still around 2 degrees off on the one side. It ended up that the spindle had been bent slightly during the wreck and it had to be replaced. I never think of cast iron "bending", but it sure does. They are never exactly as they were new, hence your need for an alignment...
