What do do while the engine is out?

Well, I have to change the clutch so out comes the engine in my 71 v4. Besides cleaning what kinds of things should be done? I have to do a valve job so the heads are pulled. When pulled the front two cylinders tested at 125psi and the car has only 85,000 miles so I assume the bottom end is fine. It sat for 15 years but ran on the front two cylinders. When I pulled the heads I didn't feel any wear in the cylinders but there is a carbon buildup on top of the pistons (how do you clean that). Should I be ok not rebuilding the bottom end (that would cost a lot right)? Should I replace any seals besides the necessary ones or check anything? What about the balance shaft gear?
