Why miss an opportunity to remove nasty old fluid from the caliper and instead push it back into the reservoir. I always open the bleed nipple before pushing the piston back. First slip a bit of plastic tubing over the nipple, oriented upwards then looping downward into a suitable container, and then ou won't have any problems with sucking air back into the caliper.
As for "hydrolock" from pushing back the piston - the official recommendation is to fill the reservoir to the "full" line when the new pads are installed, and then leave it alone. During periodic fluid flushing, note the fluid level before you start and then leave the system at the same level. Then you won't have that potential problem even if you ignore the above advice to open the nipple.
