... I believe. I also find it odd that a shop would turn down an alignment job. Most will charge a set price for an hour of work, regardless of how much "aligning" needs to be done.
Does the car pull left or right? Did your older tires have any odd wear on them? Maybe not if they were only replaced after 10k. Maybe you really don't need an alignment. I know you want to keep your car perfect, but a slightly out of perfect alignment car is not going to cause any lasting damage like skipping oil changes will or letting bird poop sit on the paint for weeks. Worse case is the tires may wear out prematurely, but that does not seem to be a problem for you. What I am saying is that you have plenty of time to figure out your alignment plan.
Based on older posts on this board, you can search and figure out what the shims are for in the rear, I am going by what I recall reading here in years past. If I recall correctly, the shop will need to unbolt the rear hub from the trailing arm to put them in place. I also recall reading that the shims are aftermarket items, genuine Saab maybe? I think the shop will need to get alignment measurements from on the car, then take it off the alignment machine, and select the proper shims and install. Then recheck on the alignment machine. It may take a little trial and error, Plan for a good amount of labor charges beyond a traditional alignment with turning adjustment links. For what it is worth, I never had a need to shim the rear wheels for toe or camber, but I drive a base model not a Viggen.
