Your LeTour can take 27x1.25" tires. Or 27x1.125, but you said you didn't want to go narrow. That's 1.25" wide or 1.125" wide. Those widths correspond to 700x28c or 700x32c so they're already kinda wide. You can't put 700c tires on those rims, I'm just saying that for the guys with modern bikes...
Lots of modern parts can be used, as long as you replace a component (like a whole derailleur). I don't think you could get individual 'parts' even when that bike was new. Let me know if you're looking for something specific.
Knees...
Yeah, lots of people have hurt their knees bicycling, but I think a lot of that is posture & technique. Bicycling doesn't have to be bad for your knees.
Make sure the saddle is high enough, and find someone who knows how to properly fit the bike to *YOU*. Including fore-aft adjustment of the saddle. You might have to buy a different-reach stem. Or you may find that the frame just isn't right. Time to start shopping. (See how easy it is for me to spend your money?)
Make a conscious effort to use lower gears & spin faster. Pretend you've got a Honda 9krpm screamer, not a Saab turbo... That'll help your knees a lot. It takes a while before 90rpm feels 'right'.
