As far as broad pure fit for marketability goes, as you probably suspect, the best bet would appear to be MBA or something business related. Employers assume people with such backgrounds are good candidates to interface between the business and IT. This has always been helpful but with the acceleration toward offshoring development they are giving more weight to people who they believe will be effective in roles as project leaders, managers, and high level analysts. This is true even when hiring for general programming type positions. In fact, I understand our IT VP got sort of anger when they hired someone for a technical role that he didn't view as as future management material. Never mind the job didn't require it. It all fits into the larger corporate picture of what positions get outsourced and what positions are internal.
But if you heart isn't in it I wouldn't do it. Engineering probably could offer a good fit. If your interested in biology what the heck. It might not be a direct match but your background will make you stronger and prove useful. The ability to work with computers, do modeling, statistical analysis and the like all fit into research work well. In fact, I ended up in IT because of my research background. The data munging, analysis, and other skills transfer to some degree both ways.
