Having ridden in AZ (flat) and CT (hilly)...

only get a triple if you live in a hilly area. If need be, you can get a bailout gear on your cassette in the back. When I moved from AZ to CT, I had a terrible time getting up the hills, and my knees started to hurt. I purchased a new bike with a triple and am much happier -- now I can spin up the hills instead of grinding them out. In AZ, my rides had very little elevation gain; in CT, I average about 5-6,000 feet of elevation gain per long ride (I'll know more this weekend, when I use my GPS).
I'd recommend getting a triple because it's harder to go from a double to a triple -- you'd have to change the front (but maybe not) and rear derailleur (usually) and the bottom bracket and the crankset. That's quite a bit of money.
