LR Discos will go almost anywhere, but are best off-road. Their gearing, suspension, torque curves, everything is meant for off road. Not bad or unpaved roads---but no roads or very primative roads, as in 3rd world countries.
They do look kinda cool and have a certain cachet to them, but you live in Colorado and drive down some bad roads some of the time. IMHO, you will get a lot more value out of a Jeep Cherokee (not the Grand) with a 4.0 6 Cyl (not the 2.8). You can get it fixed at almost any gas station and buy parts at Pep Boys Auto Zone, etc. There are TONS of after market parts and accessories to make it incredibly capable, and you will spend a lot less on it overall than you will to buy and maintain a Disco.
One poster says forget the Explorer. I have one, and the answer is yes and no. If you are on seriously bad roads the Jeep is much better, but Explorers can do quite well. We've taken ours into some gnarly spots in Maine and had no issues. However...They are too bulky for serious off-road work in stock or close to stock trim--they need aftermarket help for that. If you have longish drives to where you hit the dirt, you might find the Exploder more comfortable than the Cherokee.
All IMHO
