I am not an attorney, so just a casual comment. The oil changes written into the service book by the salesman after the fact, rather than by the servicing dealers at the time complete with dealer ink-stamps, etc., make it a big grey area. Especially if Saab looks in their service history database and (perhaps) sees no evidence that a dealer did the required services? If services up to 30k miles were done at a dealer, it should/would be in the Saab system. If done elsewhere, dated oil and filter receipts would be the minimum. Was it CPO? You didn't mention miles on car or which engine.
And you will have to decide whether your daily drive patterns qualified you for the full service interval. Many of us in urban ares clearly meet the test for the severe service oil change schedule. In my three Saabs' manuals, q.v., the severe or harsh service schedule is to change oil at least twice as often.
$7,000 is more than the car is worth, but if Saab sticks to its guns, you could probably get it done much more cheaply at an independent shop.
Anyway, good luck with your lawyer.
