a civic is a pretty good bet for learning stick shift. it is a hard car to learn on because it has so little low end power, but that will make you appreciate letting off of clutch SLOWLY. there are no real bad years for civics as far as i know, they've been a simple design for a while. even the old crx's (crx and del sol's are civics)are good, and they can get upwards of high 30s mpg.
a tip that helped me when i was learning stick shift is to start out on flat ground and not use the accelerator. simply start the car in first and let off the clutch very slowly until the car begins to move. this will give you a good feel for where the clutch is catching and how slowly you need to let off the clutch so as not to stall it. the only problem is that i learned this on an old 9kt that my father owned. i don't know if the civic engine could do this, though i assume it could since the body is so light
