Scott's points are right on, I think, based on my 30+ years of serious riding, on and off road. Good shop, good fit, good components: all are more important with road bikes than with fat tires.
I suggest that you ride a series of bikes, from low-to-high price. At each step up the way, you'll notice differences. And then, at some point, you won't notice them; that's the point to buy. When I bought my last road bike in 1990, I found a big difference up to the 105 group Scott mentioned, and after that differences were less noticeable, so I went with the 105. Obviously, I've been pleased as I'm still riding the same bike.
If what you really want is too expensive, look for local bikes on E-Bay. When I bought my hard tail a couple of years ago, I knew I wanted a Klein Attitude Comp but couldn't afford the $1500 price. After about a month, a year old, hardly ridden one showed up on EBay about 100 miles away, which I picked up for $600.
One more thing: I love aluminum. Some folks find it harsh; I find it responsive. Might have to do with rider size: most of the aluminum fans I know are on the smaller side.
