Asking advice on bbq in a public forum can be a dangerous thing. I think you'll find more contrary opinions on this subject than any other.
The one universal rule, however, is that cooking times should be measured in hours, not minutes, and that was your problem. To do it right, you've got to use a smoker, preferably a big drum cooke, and to try anything else is a fool's errand, and you'd have better luck just mail ordering them from Memphis. In addition to the above, REALLY good ribs require an 80 year old geezer cooking them, preferably one who's been sitting in front of a bbq pit for at least 65 of those years.
Now, a hint from one in the know:
The big bbq places, like the ones tourists get to visit, cannot possibly cook the quantity of meat they serve the right way. Their secret is to boil them until they're falling off the bone. Then they throw them on a hot grill to get them crispy, and they make sure there's a lot of liquid smoke in the sauce. The big pits are there for show. Tourists are not allowed to see the real bbq places. Those are reserved for us, and we prefer not to fight the crowds. I'm posting this anonymously, since I could be strung up, or at least banned from good bbq, for revealing that little tidbit.
