A lot of the cars that last are the specialty cars that people have loved and have survived. Like .... um .... SAABs. As a side not to that, the youngest son of a previous owner of the first engineering firm I worked for was a particularly wild guy who once told me "You don't want to know how many SAAB Turbos I crashed."
The falling apart thing is also partially (but not completely) because a lot of people just treat their cars like appliances. The long-term survival rate for cars in general is probably pretty low, in general. I've seen a bunch of ALFAs and Porsches in junkyards and on the other hand, I've seen pristine unrestored 50s, 60s, and 70s commodity cars.
