Way OT: Paying for stuff on vacation in Germany

We're headed to Germany for a couple of weeks in December. Mostly down south (black forest, the alps, Munich, and so on). I've been to Europe and Germany before, and loved it.
But this time we're staying at a very nice hotel/spa out in the middle of nowhere, and they said they don't take credit cards for anything other than the restaurants. They do take the EC card, which is apparantly like a check card, but it requires a European bank account.
Our total bill will be a couple of thousand Euros, and I'm wondering about how to pay for this. I'd rather not carry that much cash with me from home. And in the US, my limit for getting cash from ATMs is $300 or so. So just withdrawing that much cash from an ATM would be difficult.
Any thoughts? Germans distinguish between an ATM card and a Debit card (mine serves as both), so do you think they might take my Bank of America check card? Or do I get a bunch of cash in the last big city we pass thru as a cash advance or something?
