the spruce goose is no longer in long beach, it's in oregon. the queen mary is still there though, and they do have a cool russian sub there as well.
do not buy gas in big sur if you go that way. when gas was 2.50 a gallon a few years ago here in cali, it was over 3.50 in big sur. now that we are averaging 3.50 a gallon here, i'm sure it's going to be closer to 5.00 a gallon.
fiesta goes on in santa barbara this week (8/3-8/7 old spanish days) if you get there in time, although town is jam packed (no places to stay if you don't already have reservations).
if you're going to legoland, as soon as you're here got to carl's jr. (west coast fast food/parent of hardee's) they're having a deal get a free kid's entry ticket with purchase of one adult one. so that may save you $15-$20.00. you can go in and out of the park to parking lot (not much shade but lots of grass end caps on lots) if you want to pack a lunch and save a bunch of money on food. the hotdogs are about $3.00 and not very hot usually. watch out for the lego store immediately to the right of the entrance inside the park, you can spend a bunch there too lol.
the weather has cooled down nicely, all the heatwave weather went east now, it's averaging low 70's in san diego, and low 80's in central cali with moderate humidity (80%, which is high for us but low for others).
gas won't be cheap, so plan for that expense if you're driving. if you go down hwy 101 south, be aware to keep to the limit as you're approaching and leaving king city, it's a notorious speed trap. i usually buy gas there as an appeasement to the speeding gods.
gilroy is kind of neat place for the garlic festival in august, if you want to know a million and one things to do with it that's the place. it is the garlic capital of california (world?). lots to eat and drink, does get crowded though.
lots of sea lions along the coast just a few miles south of hearst castle. you can park on ocean side of hwy 1 and go watch them. they don't do much lol.
the cable car museum in san francisco is a cool place to visit, as are alcatraz as mentioned. there is also ghiradelli square (chocolate makers), a ww2 q ship and a german submarine not far from the square, the winchester house in san jose as mentioned.
peterson automotive museum in los angeles, and the la brea tarpits. the cochella valley (palm springs) has a very cool airplane museum, and in palm springs itself the cable car ride up to the mountains (even though it's 110 or so in palm springs, bring a jacket or vest, temp is 40 degrees diff or so at the top).
