I think the number of times the clutch pedal is used is unimportant. The total time the clutch is used is somewhat important, and how gently the clutch is used as most important.
1. I put the car into neutral and let off the clutch while waiting at lights.
2. I release the clutch pedal. The action of re-engaging the clutch to take off is something I do after looking both ways. (sometimes while still moving for those rolling drivers-ed-failing stops) Personally I think it's good to have some sequence to follow at stop signs so nothing gets overlooked.
3. I share the same opinion.
Most of the time, I double clutch on downshifts, for smoother driving and to be gentle on the clutch and transmission. The clutch is barely used, mostly just to compensate for minor mistakes matching speeds.
