I try to change coolant every couple years and do the brake fluid at about the same time.
I lube door locks and hinges a couple time a year.
Keep the car vacuumed and generally clean inside. Immaculate isn't necessary, just so it looks taken care of.
Clean the engine compartment every year or so. It keeps grunge from building up and hiding leaks and make it much nicer to work on the engine.
Change plugs and filters on a schedule.
Keep a log book of all the stuff you do with date and mileage of each maintenance or repair.
Use factory parts when possible. They fit better and often last longer.
Fix stuff when it breaks.
Deal with noises and issues sooner rather than later.
Use silicone or Armor-all on door gaskets 1-2X a year to keep the rubber in shape.
If you live in snowy areas, rinse the underside of the car in winter to get the salt off.
