On my annual trip to Arizona I find 80-85 is the flow of traffic and 90 is not uncommon. The speed limit is usually 75.
Two days ago on I-95 in CT, the left two lanes were doing 80+ and the right lane(s) were at 65-75. Ditto in various places I usually go in CA, on the Mass Turnpike, or stretches of the NY Thruway.
In Canada the limit is a piddling 62 mph and the traffic runs at 75-80 and I've been in 90+ traffic around Toronto.
In France my wife (who resists when I go over 75 here in the US) goes to sleep while I'm running 100 mph between Paris and Angers. She says it's much safer to drive 90-100 there because most other cars are going the same speeds.
So what is a safe speed? Some of it is relative, some very practical.
I don't know the details of this guy's run. With extra gas, a couple of competent drivers could average around 90 on that run and not be driving a great deal faster than a lot of the traffic out there. Plan the route to avoid the worst of the traffic and I think it could be done fairly reasonably.
I still think it is dangerous and probably irresponsible because the pressure to break a record would tend to lead one to drive excessively fast when the opportunity arose, but I see a whole lot more crazed, potentially homicidal driving at fairly normal speeds. It's by kids in ricers, moms in SUVs, yuppies in Lexuses, Mercs and Bimmers, and guys with NASCAR numbers on the back windows of their jacked up pickup trucks.
