Test both TVs with a digital SDTV, 720p and 1080p source (I'd pick 720p material over 1080i anyday, but that's a different discussion). You'll probably find that you'd be hard pressed to tell a difference between the 1080p and 720p set both connected to a 1080p source at the same time, unless you step right up to the screen. Plasmas tend to have better color and contrast than the LCDs. Typically just a less washed out - more vibrant picture, though LCDs are getting closer. So with a given budget you'd probably be choosing either an LCD with higher resolution but less vibrant and pleasing image quality or a plasma with less resolution but a generally better image quality, at least with SDTV and 720p material, but no huge difference in 1080p.
If I were going to get a flatscreen I'd get a Pioneer 1080p plasma. But I'm more into getting a projector for the home theater. 1080p projectors are nearing sane prices and with a 100" + screen size, the difference between 1080p and 720p becomes much less subtle...
