I just ordered a 50" 720p Panasonic plasma yesterday.
My viewing distance is 10-12', so the extra 3-4" on the plasma over an LCD were attractive.
I looked at various models in stores and simply could not see the difference, resolution-wise, between the 1080p and 720p models at my viewing distance. Even moving a several feet closer I'm not sure I could tell.
I definitely found the overall picture quality of the plasma to be superior. It just looks smoother and more real. LCDs too often seemed to have these blazing whites and unnatural colors. Perhaps that was the fault of the setup of the screens I was seeing, but it was common. Also plasmas do fast motions better, and I'll be watching a lot of sports.
Another consideration is the room you'll be using it in. Bright daytime lighting? Lots of windows? The LCD might be better, plastic screen vs. plasma's glass. Though the Panasonic I'm getting has a great anti-glare screen that seems to eliminate those concerns.
All this talk of 1080p, 1080i, upconverting, downconverting, 120Hz, etc, it's all theoretical. What you're looking for is the best picture/size/price combination for you.
I suggest checking out some reviews of the particular models you're interested in, Cnet.com does a good job. They also have some good "LCD vs. Plasma" and "1080p vs 720p" articles. FWIW, the highest rating they've ever given to a TV is a Pioneer Kuro plasma, 720p.
