be sure to do both the coast and lakes/mountains in the west. I'd start with the coast and work your way up to Bar Harbor/Acadia. Although the roads can be a bit crowded, get on Rte 1 from Freeport on east. You don't run along the ocean very much. That's down dozens of little roads that often dead end at the water. It's all good.
Once you're done with the coast head west. From Bar Harbor go to Bangor (almost the center of the state) and head west on Rte 2. Go through Farmington (my daughter goes to college there) and eat at the Granary or grab a sandwich at Soups for You. Then pick up Rte 4 to Rangelely. Rangeley has several restaurants, lots of shops, good fly-fishing store, etc. The Red Onion has good Italian food, very reasonable. There's an amazing Thai restaurant, too. Drive 7 miles up the road to Oquossoc. Tiny town. You can get a 1st class dinner at the Gingerbread House, or more moderate prices and "interesting" menu at The Four Seasons (great chili). If you want a decent B&B, Oquossoc's Own B&B is a good bet. Amazing breakfasts!
There's a good hike up Bald Mountain just out of the village, another to Angel Falls, and the boat store rents boats and kayaks. Head south on Rte 17 about 6 miles to "Height of Land" which has a mammoth view of Mooselookmeguntic (20 miles long, 6 miles across at that point). Then keep going another dozen miles to Coos Canyon. Great place to hang out on a summer afternoon (go mid-week, crowded on weekends)
Get a "Maine Atlas & Gazeteer," *the* map book for Maine. It's put out by DeLorme and is available in most gas stations, convenience stores, tourist traps, etc. It has virtually every road you will ever want to take. And will help you not get lost if you get way off the beaten path.
When you're done, head back down to the Maine Turnpike, or go west on Rte 16 into NH and work your way over to Franconia Notch and pick up I-93 south.
Whatever you do, whatever routes you pick, you'll have fun. Just watch out for moose. Seriously.
