Waikiki has a good beach for the little one, with a protected area behind a seawall, near the Marriott. The Marriott is also near the zoo, possibly worth a visit, and a large park for relaxation. Walk the Waikiki beach for the sites, but Waikiki is very touristy, shopping, hotels, shopping, ... and beach! Browse a few ABC stores, as they don't all have the same stock, for less expensive souvenirs etc. There's a Safeway a few blocks up Kapahula (runs from the beach next to the zoo, a block from the Marriott).
As mentioned, fins and even a snorkel are very handy, BUT BE CAREFUL OF THE SUN! We live in Vermont now, and my son got very burned one day at Hanauama snorkeling way too long.
Get a car if you can, at least for a while - the North Shore is a must see, get shaved ice at Matsumoto's in Haleiwa. Only place I've seen real shaved ice other than snowballs growing up in New Orleans. And get lunch at a shrimp truck while there, such as Giovanni's. There may be a line, including locals, but well worth it!! And stop at Dole's on the way to Haleiwa.
Polynesian Cultural Center, run by Brigham Young University-Hawaii, is a great experience of the Pacific Islands, but probably a long day for a 1 year old. There is a very good luau there. If you don't want/have a car, you can take a bus to PCC from the Marriott.
The hike up Diamond Head is really nice, but somewhat strenuous (and the trail won't take strollers...). Well worth it if you're accustomed to hiking with the baby. Take water. It is possible to walk there from the Marriott.
