You're right that the temperature gauge only reflects coolant temperature, not oil temperature.
I've always installed an oil pressure gauge in my Saab's. I had one in my 2000 9-5 and I have one in my current 2007 9-5.
The oil pressure gauge reads quite high when the car is initially started, but this decreases to a stable normal reading after 12-25 minutes depending upon outside temperature. At 60 degrees outside temperature it would take 12-18 minutes depending upon load. Moderate driving on the highway does hasten things along. I've had experience in the winter where the outside temperature is 15-20 degrees; 30-40 minutes to decrease to normal oil pressure is not unusual if you're doing low speed local driving.
From what little reading I've done, driving moderately for the first 15-20 minutes will bring the oil to, or close to, normal operating temperature. Following this, I've observed that oil pressure is at or close to normal operating pressure.
By the way, in following the above, I put 280K miles on my 2000 9-5 without ever opening up the engine.
