Sorry about the hassle you're having, but at least you're OK. A guy near me died last year when his car came down on him.
I have the misfortune to have a sloped driveway, so I've had the car come off the jack a couple times, despite taking precautions. I have a scissors jack that I can fit under the car and crank it back up. Annoying, but no biggie. Haven't damaged anything when this has happened.
What I do in now is chock at least two of the wheels not being jacked: 2 on the opposite side of the car and sometimes the non-jacked wheel on the side being lifted. I jack it up, trying to keep the jack wheels across the slope, then get a stand under the car ASAP, usually putting it under a suspension point, like where a trailing arm connects or other non-flexible point. I put the weight of the car on that, and leave the jack so it is taking a slight load. Have done it this way on numerous cars for 40 years with no issues. Of course it's a lot nicer on a flat driveway or floor!
That said, a big jack makes a difference. I have a smallish one with a single front roller and 2 pivoting rear wheels, but plan to get a big 3+ ton floor jack that weighs about 100 pounds. Not as easy to move, but it also won't move easily under load. Some of these have 4 non-pivoting wheels so they will stay planted. Maybe that'd be right for you, too.
