I have 2 jacks - 1 of each of the2 kinds you've linked. The low profile one is needed for my 04 9-5 Aero, the car sits very low. For wheel swaps or other jobs that require 2 jacks (I prefer ramps by far) once I've used the first jack then the second one is used. Jack stands for safety but you already do that. As someone else pointed out, the wheels on the jack need to be able to move. Wath how the jack lifts the car. If it can't roll, the jack will start to lift at an ever increasing angle. The higher you go, the more danger. Vigorous work while the car is in the air can shift the weight around as well. And chock the tires too.
Question, is where you're working level? If not, could be part of the problem.
I've dropped the car a few times using the scissor jacks that come with the car so I'm not a fan of those.
It sounds like you're on the right track and will be in good shape. Work safe and remember that even the pros drop cars on occasion!
