Two trips to the Aero Academy taught us the following:
For the drivers side mirror, place your head against the glass and adjust the mirror so the left side of ypur car can just be seen in the right side of the mirror.
For the passenger side mirror, tilt your head over the center console and adjust the mirror so the right side of your car can just be seen in the left edge of the mirror.
When adjusted correctly, any car approaching from the rear should come into view in the side mirrors as it leaves view of the rear view mirror. Your peripheral vision should also detect a car nearly alongside, but doesn't preclude a glance to the left/right.
