I guess both South Korea and China do import some portion of the food consumed. Similarly, countries like the Netherlands would collapse if they weren't able to import food and other goods.
For a population biologist carrying capacity is a very standard and straightforward parameter. Populations do crash do to resource depletion. It's true that humans have developed more and more efficient ways to produce food, thus pushing Malthusian limits further away. In the future clever bioengineering can produce highly efficient food such as synthetic meat that could eventually replace more wasteful ways of producing food for an evergrowing human population. But I don't believe this will happen anywhere in the near future. At the moment we're consuming more natural resources than the world produces and nothing indicates that this would change anytime soon.
