Yup, they're ridiculous! They're everywhere in major east coast cities (and probably elsewhere too). A single speed isn't crazy in a relatively flat city (I found myself using just a gear or two in some places) but I'm not sure I see the downside to having more gears (and certainly not going to the trouble of actively removing them). As for a fixed gear bike, the only real use is in training for competitive riders to help with a smooth cadence or as a track bike. The whole road bike to city bike conversion is silly to me too - even if you're using straight handlebars your still hunched over too steeply for good visibility, and your often limited in what fenders and paniers you can use. It's just a silly trend, but it's a shame to see these great old road bike ruined if you ask me.
I ride an old ridged aluminum mountain bike with slicks in the city. It's fast, agile, sturdy, and has a comfortable riding position.
