I suspect that the listed 75/80 psi is for the truck's maximum load. My 3/4 ton Dodge diesel truck had a separate label on the door jamb listing tire pressures for lighter loads, and those pressures were also listed in the owner's manual. I ran 50 front and 40 rear most of the time, with good results.
I would not recommend using anything but an LT tire in the proper load range (E) on such a truck.
I second the use of weight in the bed to enhance winter traction. I used sand tubes instead of bags of salt, two 50 pound tubes per side.
