Somehow, some Norwegian discovered hundreds of years ago that if he/she soaked Cod Fish in a Lye solution, it preserved the fish so that it could be eaten during the long winter months. The lye apparently breaks down the structure of the cod meat turning it into an amber blob with the consistency of soft jello. I 'believe' the preserved fish meat is boiled (maybe multiple times) during final preparation to remove the residual lye solution before eating.
Stinks like old fish, looks like soft jello, has no 'mouth feel' when eating. Some Norwegian-Americans eat it every holiday season as a link to their ancestral country. Luckily not my wife's family - although the previous generations did.
