This has always been a favorite conversation, and I went through it when looking to replace my '08 9-3 aero wagon 7 years ago.
Fun and functional are two words that are hard to satisfy in today's choices.
Frankly, I found the mid level cars were in a race towards mediocrity. I wanted to like Subies, but the WRX was/is too small, and the legacy is a bore. Wanted to like the Honda accord, but at the time they didn't even have a split folding rear seat... but their engine choices are getting better.
The new Acura integra is intriguing, as you can get a hatch with manual, but definitely on the smaller side. I owned a TLX, which was a nice driving car, but still a bit boring.
I like the VW Jetta GLI. Was hard to find at the time I was shopping, but good driver, plenty of room and power. Interior finish on the cheap side.
So, even though you said NO high end, I am now on my second BMW 330 GT. They stopped making them in '19, but it really checks a lot of boxes. Hatchback, great driver, great seats! Just wish it was a manual.
I will likely be looking for electric or hybrid for my next car, but that hopefully won't be for a while.
