The leather in our 2004 9-5 is not really as nice as in our c900's but over time, all seating surfaces start to degrade. The non-seating parts of most seats are not leather anyway (even on our 1989 c900 - the seat backs are well disguised vinyl), so while leather is nicer, I'm not sure how much that matters to folks nowadays?
What matters way more is the structure of the seat - how it feels. If you must have leather and plan to keep the car long enough to wear it out, you can often change out the seat skins (a little trickier if they have airbags in them) to make them look new again... but if the seating support is not what fits you... well, there is not a huge amount one can do (ok I suppose there is Recaro, or frankensteining something nicer in - iirc, there's a guy here who fitted some 9000 aero seats into his pickup)...
Seats would be only 1 of many factors in choosing a car. How they feel would take priority for me vs how they look... but to each his own.
Oh, and in terms of resale - if volvo seats wear faster, well, as long as you take better care of your seats than other volvo owners, you will have a nicer looking (more valuable) volvo to sell when the time comes!
The volvos I've sat in have been very comfortable, and to a large extent, have ergonomics that at least have some familiarity to a Saab owner. Volvo would be high on my list of brands if there weren't so many good used cheap saabs around!
