Its hard to do that with a re-torque because the coolant might start to seep through the gasket before you reach the last step of the re-torque. The head should already be torqued down evenly and to re-torque it is a little different than the first 3 step torquing of the head.
I have done a re-torque before and I did like you said, one at a time to the proper spec and in the right sequence. Good Luck,
