Hope all's well with you and your project!
Can you tell us more about the installation of your EFI?
We find that the 7EV plugs will have better performance against high running temperatures and electrode longevity but have less spark progression due to the fine palladium electrode. The ES plug will typically provide a broader electrode and this will bring about a greater spark progression through the same ignition system.
If you want to reduce fouling, a step to the 6 series may be just the thing (6ES) and you should not find these prone to detonation at the charge pressures you're seeking.
