Before I bought my 9-3 three years ago, I was thinking the same thing, why have a night panel switch?
But that was before I ever tested it. Now I love it and hate driving cars that doesnt have such a feature.
Try driving at dark roads for an hour with night panel activated and then deactivate it. You will find it very disturbing!
And no! you dont get the same effect by dimming the lights, I have tried that and night panel is much better.
About aircraft inspiration, red lights are good in aircrafts because it is always dark in front of you. When you drive a car, you always look into your own headlights, so green lights are better than red.
Also when flying an aircraft, you dont have do look out for wild animals and people. A good view of the road is more important when driving than seeing the rev, exact temp of the engine etc...
