There's really just good + bad mechanics. Saab specific knowledge is helpful for sure, but attention to detail is more important. I had a "local mechanic" rebuild the engine in my 1993. He did a great job!
I agree with Bill. I don't see how you could have that much damage with that description without evidence of it going sooner. Even the waterpump going usually has a telltale sound... and even so it can take months from the warning signs until they finally give up the ghost...
definitely get it fixed, but not at that dealer!
