I just went through the same process and came out with a '03 Arc. The 4 cylinder appeals to Saab enthusiasts, but the V6 is a fine engine. The 4 cylinder gives slightly better fuel economy, while the V6 seems to have a little less turbo lag. I like the throaty V6 sound, but others don't. Maintainence on the V6 is higher mainly because of the timing belt changes. With the 4 cylinder however, there is a potential for sludge, seemingly dependant on frequency and quality of oil changes, driving habits/conditions, whether certain updates/mods have been fitted, and possibly even machining of the particular oil pump in a given car. With all of these variables, I just wasn't comfortable buying a used one without service records, and I never found one that had been well maintained. Bottom line--drive both engines and see which one you like better; if you prefer the 4, try and find a very well maintained specimen, and if you like the V6, budget several hundred for the t-belt change. As for trim lines, I love the luxury options of the Arc, especially the cooled seats. The Aero seats have much better bolstering, though it is a very stiff suspension, in my opinion--too stiff for my daily drive. As others have said, try and find a 2002 or newer because of the chassis updates and five speed automatic. Whatever you decide, you're gonna love your new 9-5!
